Service Director Department: Culinary
Reports to: Executive DirectorSummary: Coordinate the dining
services program to provide nutrition and variety within a budget.
Oversee the nutritional needs of the Residents, ensuring balanced,
healthy menus for older adults. Supervise all dining services. -
Position Requirements Essential Duties and Responsibilities:
include, but are not limited to:
--- Plan weekly menus with variety, using foods in season.
--- Plan menus and prepare foods for special events.
--- Prepare and cook food following prepared menus.
--- Adjust menus to utilize the foods in the refrigerator and
freezer to prevent waste and spoilage.
--- Serve as a resource for the Cook(s) with ideas for the
utilization of leftover foods.
--- Maintain an inventory and requisition food and supplies from
approved Suppliers.
--- Maintain a clean, orderly and safe kitchen environment.
--- Ensure proper storage of food for infection control.
--- Develop and implement policies and procedures in the dining
service program that are in compliance with food service
regulations.
--- Coordinate and assign work to dining services staff.
--- Interview and recommend dining services staff to Executive
Director.
--- Participate in performance evaluations and disciplinary action
required for dining service staff.
--- Prepare the work schedule for dining services staff.
--- Provide educational opportunities for staff and residents.
--- Encourage and invite Residents to participate in the dining
services program.
--- Organize activities that revolve around food and food
preparation.
--- Carry out other duties, as assigned.
Working Behavior: Adhere to and carry out all policies and
procedures. Report on-the-job injuries to the Supervisor before the
end of work shift on the day the injury occurs. Establish and
maintain constructive working relationships with coworkers,
Residents, families and visitors. Maintain confidentiality of
verbal and written information pertaining to Residents, facility
operations and personnel. Promote facility in a positive way.
Promote teamwork in providing services to Residents. Promote
customer service. Maintain regular and punctual attendance. Attend
mandatory in-services. Maintain education requirements as defined
by scope of practice, if applicable.Knowledge Expectation: OSHA
regulations-MSDS Sheets and procedures. Fire and Safety procedures.
State food handling and Assisted Living regulations. Operation of
kitchen appliances (dishwasher, garbage disposal, microwave, coffee
maker, ice machine, blender, mixer, etc.) and office equipment
(fax, photocopier, telephone).Working Conditions: Heated/Air
conditioned, well-lit facility with minimal barriers. Kitchen can
become quite hot during summer months. Weekend work on a rotation
basis. Lifting, pushing or pulling up to 30 lbs., using proper body
mechanics or available equipment. Bending or kneeling to perform
cleaning tasks in the kitchen and dining room areas.Qualifications:
Demonstrated experience in food preparation. Certificate or Degree
in food service preferred. Enjoy working with older
adults.Standards: Residents always come first. Their needs will be
met unless there is a conflict with the needs of others or the
organization as a whole. Employees will not work under the
influence of mood-altering or illegal drugs or alcohol. Neat,
professional appearance. Adherence to the dress code and good
personal hygiene are expected. - Salary Range This position is
